Happy Fat Tuesday everyone!

What does Fat Tuesday have to do with Triathlon?

Nothing*.

BUT – Fat Tuesday is also known as Shrove Tuesday which is also known as Pancake Dayhere and in the UK, and you all know I enjoy me some pancakes.

*However, if someone decides to replace the run portion of a triathlon with a pancake race (traditional in England), I’m totally in. Just saying. (Watch a video with explanation of pancake races here).

And pancakes are a good food for endurance athletes! Runner’s World says so. And the Runner’s World Cookbook has a two-page spread of pancake topping and batter ideas…which I though I would share with you all today. I have not yet made it through all these ideas, but it’s a life goal. If you try one and need a taste tester, you know where to find me!

Without further ado:

Pancake Batter and Topping Ideas, by Caitlyn Diimig  from The Runner’s World Cookbook.

Sweet Success: Mix dates, raisins, and cinnamon into the batter.

Stomach Soother: Mix fresh apricot and fresh ginger into the batter. Top pancakes with honey.

Cranberry Oat: Chop old-fashioned rolled oats in a food processer. Mix with the all-purpose flour (1:1 ratio). Add the oat mixture, dried cranberries, and orange zest to the batter. Top pancakes with cooked cranberries and cinnamon.

Espresso Delivery: Substitute espresso for half of the milk. Mix cocoa powder and hazelnuts into the batter. Top pancakes with raspberries.

PB Booster: Use only whole wheat and all-purpose flours (1:2 ratio). Mix bananas into the batter. Top pancakes with raspberries.

Quirky Quinoa: Mix cooked quinoa and all-purpose flour (1:1 ratio). Add lemon zest, cinnamon, nutmeg, and blueberries to the batter. Dust pancakes with confectioner’s sugar.

Green Monster: Mix chopped baby spinach leaves into the batter. Top pancakes with strawberry puree and a sprinkle of confectioner’s sugar.

Guac It Out: Mix corn kernels into the batter. Top pancakes with guacamole.

Aztec Warrior: Mix ground ancho chile pepper, unsweetened cocoa powder, and chopped dark chocolate into the batter.

Fig and Pear Pancake: Mix figs, pears, and walnuts into the batter. Top pancakes with vanilla Greek yogurt.

Wake-Up Call: Mix orange zest and nutmeg into the batter.

Big Chipper: Mix chocolate chips into the batter. Top pancakes with whipped cream.

Banana Nut: Mix chopped walnuts and banana slices into the batter.

Twice-Baked: Mix cooked mashed potato, thyme, and shredded cheddar cheese into the batter.

Berry Medley: Top pancakes with strawberries, blueberries, blackberries, and raspberries.

Chocolate Peanut Butter: Mix chocolate chips into the batter. Spread peanut butter on top of pancakes and add a sprinkle of confectioner’s sugar.

Lemon Zing: Mix lemon zest or lemon juice and poppy seeds into the batter.

‘Cakesgiving: Mix pumpkin puree and nutmeg into the batter.

Pancakes S’More: Mix mini marshmallows into the batter. Top pancakes with unsweetened cocoa powder.

Hawaiian: Cook Canadian bacon or diced ham and add to the batter. Top pancakes with diced pineapple.

Vitamin C Booster: Mix fresh raspberries and lemon zest into the batter.

Peaches n’ cream: Top pancakes with fresh peaches and mascarpone.

Down Under: Mix banana slices into the batter. Top pancakes with Nutella.

Pineapple Upside-Down Pancakes: Mix diced pineapple and brown sugar into the batter. Top pancakes with fresh sweet cherries.

PB&J: Top pancakes with peanut butter and strawberry preserves (or fresh strawberry puree).

Patriot Cakes: Top pancakes with raspberries, blueberries, and plan vanilla yogurt.

Café Hotcake: Substitute chai tea latte concentrate for the milk and mix pumpkin puree into the batter.

Tropical Treat: Mix banana slices into the batter. Top pancakes with fresh-cut mango, papaya, and pureed pineapple.

Cherry Cocoa: Top pancakes with fresh cherries and a sprinkle of unsweetened cocoa powder.

Carmel Apple: Mix diced apples into the batter. Top pancakes with caramel drizzle.

Island Style: Mix unsweetened coconut flakes and lime zest into the batter. Top pancakes with chopped macadamia nuts.

Fiesta ‘Cakes: Mix pureed black beans into the batter. Top pancakes with sour cream, chives, and salsa.

Christmas ‘Cakes: Mix peppermint extract into the batter. Top pancakes with unsweetened cocoa powder.

Pom-Cakes: Top pancakes with pomegranate syrup and finely chopped mint leaves.

Citrus craze: Substitute orange juice for the milk and mix lemon zest into the batter. Top pancakes with mandarin oranges.

Carrot Pancakes: Mix shredded carrot, fresh ginger, and diced apricot into the batter.

Sweet Southerner: Mix sweet potato puree, a splash of bourbon, chopped pecans, and brown sugar into the batter.

Crunchy Cakes: Mix cinnamon and granola into the batter. Top pancakes with plain Greek Yogurt, honey, and more granola.

Strawberry Rhubarb: Mix rhubarb into the batter. Top pancakes with pureed strawberries.

All-American: Top pancakes with apple slices and vanilla ice cream.

Soy Special: Substitute soy milk for the milk, and mix silken tofu and cocoa powder into the batter. Top pancakes with blackberries.

Ricotta Pear: Mix diced pears into the batter. Top pancakes with ricotta cheese and maple syrup.

Curry Coconut ‘Cakes: Substitute coconut milk for the milk, and mix curry powder, turmeric, fresh-cut peaches, and mango into the batter.

Lumberjack: Add cooked, chopped bacon into the batter. Top pancakes with maple syrup.

Key Lime: Top pancakes with whipped cream cheese and lime zest.

Green Dream: Mix finely chopped pistachios, goat cheese, and lemon zest into the batter.

Mediterranean: Mix feta cheese into the batter. Top pancakes with kalamata olives.

Speakeasy special: Mix a splash of Grand Marnier and orange zest into the batter. Top pancakes with sliced almonds and honey.

Beer Batter: Substitute a dark beer or raspberry beer for the milk, and mix orange zest and lemon zest into the batter.
